Pasteurization wasn’t created because milk was dangerous. It was created because filthy, inner-city “swill dairies” in the 1800s were pumping out milk from diseased cows fed leftover brewery grain. These cows were sick, malnourished, and often tied up in dark stalls, standing in their own filth. Their milk was thin, blue, and filled with pus and bacteria.

So what did they do? They doctored it up.
They added things like:

Chalk (to whiten it)

Starch (to thicken it)

Plaster of Paris

Sugar and salt

Even formaldehyde (yup, that one) to mask the rot

Instead of cleaning up the dairies, they introduced pasteurization as a cheap fix to make dirty milk “safe.” Fast forward to today, and it’s not much better.

Modern milk is:

Homogenized (which damages fat molecules)

Pasteurized (killing beneficial bacteria and enzymes)

Stripped of nutrients

Reinjected with synthetic vitamins (like D2 and A palmitate)

Often comes from cows on antibiotics, hormones, and grain-heavy diets

No wonder people think they’re “lactose intolerant.” Most of the time, it’s not the milk—it’s what’s been done to it. Real, clean, raw milk from pastured cows is a whole different story.
