2 Eigelb 250 ml Pflanzenöl 2 TL Zitronensaft Salz & Pfeffer ½ TL Senf
Eier trennen. Das Eigelb mit dem Senf in einer Schüssel sämig rühren. Erst dann kommt tropfenweise unter ständigem Rühren das Öl hinzu. Das Öl langsam dazu laufen lassen. Dabei immer rühren, nur so wird die Mayonnaise cremig. Anschließend den Zitronensaft hinzugeben. Mit Salz und Pfeffer abschmecken, fertig.
Im Kühlschrank hält sich die Mayonnaise 3-4 Tage. Ist die Mayonnaise zu dickflüssig kann sie mit Wasser oder Zitronensaft verdünnt werden. Will die Mayonnaise gerinnen, kannst du sie versuchen zu retten, indem du unter rühren Wasser hinzufügst.
