Kurz vor der Blütezeit wird der innere Kern entfernt und Pflanzensaft entnommen. Aus dem daraus entstandenen Loch fließt dann monatelang täglich bis zu 1,5 Liter süßer Saft. Danach wird es durch Erhitzen entwässert und der Agavensirup entsteht.
Es hat eine milde Süße und ist relativ neutral im Geschmack. Je dunkler der Sirup, desto mehr Karamellnoten besitzt er und umso herber wird er.
