Vollkorn Lebkuchen vom Blech von Peter von Breiten
700 g Vollkornmehl ,ich habe Dinkel genommen 1 ½ Pck Backpulver 250 g Honig 250 g Zuckerrübensiruo 100 g Butter 100 ml Sahne 150 g Mandeln oder Haselnüsse (grob gemahlen) 1TL Zimt 1Pck Lebkuchengewürz 3 Eier 125 g kleingeschnittenete Datteln evtl. 1-2 El. Rum
Mehl und Backpulver mischen ; Honig, Butter und Sahne schmelzen lassen ; alles zusammen verrühren den Teig ca. 3 Stunden ruhen lassen, dann auf ein gefettetes Blech oder Backpapier nehmen, ausrollen und bei ca. 170⁰ ca. 20 Minuten backen.
Dann nach Belieben mit Zitronen oder Schokoladenglasur noch warm bestreichen und in Stücke schneiden.
