APFELSCHMAUS Bei Apfelschmaus wird erst der Apfelsaft gewonnen. Diesen läßt man dann über ca. drei Tage unter Hitze einreduzieren. Der Saft muß nicht kochen, sollte aber die ganze Zeit heiß (und ohne Deckel) stehen, damit die Flüssigkeit verdampfen kann. Übrig bleibt ein zuckerfreies Konzentrat, von der Konsistenz wie eine Paste, etwas fester wie Pflaumenmus. Heiß und steril abgefüllt ist das Apfelschmaus lange haltbar.
