Spargel waschen, trockentupfen, die holzigen Enden abschneiden und in Stücke schneiden. Zwiebel und Kartoffel schälen und klein schneiden. Olivenöl in einem Topf erhitzen. Zwiebel dazugeben und kurz andünsten. Spargel- und Kartoffelstücke dazugeben und ebenfalls kurz mitdünsten. Suppenwürfel dazugeben und mit Wasser aufgiessen. Zugedeckt bei mittlerer Hitze ca. 20 Minuten köcheln lassen. Zitrone auspressen. Zitronensaft und Avocado zur Suppe geben. Die Suppe cremig pürieren, mit Salz & Pfeffer abschmecken und nach Belieben mit etwas Wasser verdünnen. Zum Servieren die Suppe in Schalen füllen. Mit Sprossen, Cashewkernen und Soja-Rahm garnieren und servieren.
