Gelatine in kaltem Wasser einweichen. Schale der Zitronen fein abreiben und den Saft auspressen. Eier und Zucker mit dem Handrührgerät ca. 3 Minuten lang schaumig schlagen. Gelatine leicht ausdrücken. 5 El Zitronensaft erwärmen und die Gelatine darin nach Packungsanweisung auflösen, dann unter die Ei-Zucker-Creme rühren. Die Zitronenschale zugeben und unterrühren. Sahne steif schlagen und vorsichtig unter die Creme heben. In Schälchen füllen und mindestens 3 Stunden kalt stellen. Die Hälfte der Beeren mit Puderzucker und 1 El Zitronensaft pürieren und nach Belieben durch ein Haarsieb streichen. Die Zitronencreme mit etwas Beerensauce und den übrigen Beeren anrichten und mit Blüten verzieren.
