1/2 Zwiebel ganz feine Würfelchen 1 TL Salz 2 TL Zucker, braun oder was man mag 5 EL weißer Balsamico 1-2 EL neutrales Öl
Zwiebeln in der Schüssel mit Salz und Zucker bestreuen und unterrühren, min.10min ziehen lassen bis deutlich Saft austritt. Essig und Öl dazu geben und verrühren. Geschnittene Zucchinis dazu geben, immer wieder umrühren und mindestens 2 Stunden ziehen lassen. Es handelt sich um keinen Fehler, dass hier kein Wasser dazu kommt, die Zucchinis verlieren während des Ziehens genug, dass die Salatsoße nicht zu kräftig ist. Die Zucchinis werden weicher, behalten aber einen gewissen Biss.
