Rotkorn-Weizen Mischbrot

1000 g Rotkornmehl VK Urkorn Puristen
700 g Weizenmehl T550 Donath Mühle
1240 g sauberes, vitales Wasser
25 g Steinsalz ohne Zusätze
40 g Anstellgut(ASG) Günther (Sauerteig)

Alles zu einem glatten, Schüssel putzenden Teig kneten. Abdecken und jede Stunde dehnen und falten. Ich mach den Teig immer am Abend.
Am nächsten Tag auch regelmäßig dehnen und falten. Somit baut ihr eine sehr gute Teig Struktur auf und es wird wunderbar.

Nach 24 h Teig Reife den Ofen mit Gusseisen Topf inkl. Deckel 1 Stunde bei 250 Grad aufheizen.
Topf vorsichtig auf den Herd stellen, den Boden mehlen und den Teig in den Topf gleiten lassen, evtl mit einem Spatel nach helfen.
Deckel drauf und in den Ofen. Temperatur fallend auf 230⁰ und 35 Minuten backen.
Deckel abnehmen und weitere 45-50 Minuten backen.
Brot auf ein Gitter stürzen und den Klopf Test machen : klingt es Hohl dann ist es fertig. Über Nacht auskühlen lassen.
