1,8 kg Pellkartoffeln gegart 1 Zwiebel klein schneiden ½ Bund Frühlingszwiebel gewürfelt ½ Bund Petersilie glatt frisch 150 g Speck gewürfelt 60 g Schinken gewürfelt 375 ml Gemüsefond 4 Eßl Kräuteressig 3 Eßl Öl 2 Tl Senf Salz und Pfeffer
Die Pellkartoffeln in Scheiben geschnitten. Den Speck ausgelassen in einer Pfanne, dann den Schinken dazu, die Zwiebel dazu , gut durchschmoren lassen. Von der Herdplatte nehmen und vorsichtig mit Fond ablöschen, Essig und Öl zugeben , Senf dazu und würzen. Die Marinade über die Kartoffeln geben und ein bischen ziehen lassen. Zum Schluß die geschnittenen Frühlingszwiebeln und die Petersilie ( kleingeschnitten) darüberstreuen.
