Bunter Salat mit Aubergine, Zucchini-Karotten Küchlein und Knäckebrot

Knäckebrot
100 gr Dinkel Mehl
4 Esslöffel Sesam
2 Esslöffel Leinsamen
2 Esslöffel gehackte Kürbiskerne
Gewürze wie Salz, Paprika Kreuzkümmel
3 Esslöffel Olivenöl
150 ml kochendes Wasser

Alles verrühren und den Teig zwischen zwei Backpapieren ausrollen, da er sehr klebrig ist. Dann 10 Minuten bei 150⁰ Umluft in Backofen backen. Danach raus nehmen und mit dem Pizza Rad dünne Streifen schneiden damit es auch wie Knäckebrot raus kommt. Jetzt nochmal für 20 min in Backofen geben.
