Die Eier 10 min kochen und abschrecken. Spargel waschen, im unteren Drittel schälen und in Stücke schneiden. Gemüsebrühe zum Kochen bringen und die Spargelstücke darin ca. 10 min garen. Die Eier pellen und in Würfel schneiden. Petersilie waschen, trocken tupfen und hacken. Das Forellenfilet in Stücke schneiden. Eier, Petersilie und Fisch vermengen. Speisestärke mit Creme fraiche verrühren und in die Suppe geben. Kurz aufkochen lassen und mit Salz und Pfeffer abschmecken. Die grüne Spargelsuppe nun auf die Teller geben und die Eimischung oben drauf. Wer mag kann die Suppe bis auf einige Spargelspitzen pürieren.
