Olluco не зря называет себя экспериментальным центром. Это настоящий НЛО в центре захваченной комфорт-фудом Москвы. Врубель, Дюшан и Сальвадор Дали - думаю, все трое были бы рады есть и работать в этом ресторане. В голове у Виейры не себестоимость или сочетания вкусов, а образы экосистем, миров, эмоций.

Карабинерос под муссом из анадары с морским ежом и камчатский краб в нори - все в красном. Примерно так воображению Виейры представляется прибрежный мир. На вкус это как острые камни, сладкие от солнца.

Напиток из свеклы, малины и бархатцев. Белые грибы и черные лисички, желе, оленина, макамбо - сочетания сюрреалистические и вдохновляющие тут в каждой подаче.

Все это надо непременно пробовать, чтобы понять: не пастой альфредо и круассаном с мортаделлой едиными жива гастрономия, что в ее необъятных границах кроется гораздо больше вкусов и смыслов.
