Если, за исключением "селёдки под шубой", не заправлять упомянутые салаты майонезом/сметаной и хранить их в холодильнике, то минимум трое суток можно не заморачиваться. Как и временем хранения "селёдки под шубой".
А уж винегрет съедать менее, чем за сутки, чтобы не пропал - просто глупость.
Тем не менее, я всегда добавляю в винегрет и др. салаты, как и в первые блюда, немного алкоголя. В целях сохранности блюда)...
