Den Backofen auf 185° Grad vorheizen und eine Muffin Backform mit Pflanzenöl fetten. Den gekochten Kürbis mit dem Mixer zu feinen Brei zerkleinern, den Zucker und Pflanzendrink dazugeben, so dass eine cremigen Masse entsteht. Nun noch Zitronensaft, Zimt, Vanille und Ingwer dazu geben. In einer Schale das Mehl mit den Nüssen und dem Backpulver vermengen. Alles unter den Teig rühren, bis dieser glatt ist und keine groben Mehlstücke zu sehen sind. Den Teig bis zur Hälfte in die Form füllen. Für etwa 20-25 Minuten im Ofen backen.
