Den Spargel waschen und schälen, die Spargelschale in ca. 1 Liter Wasser aufkochen und etwas 20 Minuten darin köcheln lassen. Den Spargel in 2-3 cm große Stücke schneiden. Die Schale anschließend abschöpfen. Mehlschwitze herstellen. Dazu die Butter schmelzen, das Mehl darin bei mittlerer Temperaturzufuhr einige Minuten andünsten. Nun mit dem Spargelfond aufgießen und rühren bis das Mehl sich darin auflöst und der Fond schön andickt. Brühe einrühren und die Spargelstücke hinzugeben. Für ca. 12 Minuten köcheln lassen, bis diese gar sind. Sahne einrühren und mit Salz, Pfeffer, Zitrone, Muskat und Kerbel abschmecken. Mit Petersilie garnieren und servieren.
