Pikante Pak Choi Suppe mit Champignons und Cashewnüssen

300 g Pak Choi 250 g Champignons 400 ml Kokosmilch 700 ml Gemüsebrühe 50 g Cashewnüsse 4 Stk Knoblauchzehe 1 Stk Chilischote 1 TL Garam masala 1 TL Currypulver 1 TL Pfefferkörner Kokosoel
Gesamtes Gemüse waschen. Knoblauch schälen und halbieren, Chili und Pak Choi in Ringe schneiden, Pilze halbieren.
Knoblauch und Chili mit Garam masala und Currypulver in einem Topf bei mittlerer Hitze mit etwas Kokosöl für 3 Minuten andünsten.
Pfefferkörner, Cashewnüsse, Kokosmilch und Gemüsebrühe beigeben und kurz aufkochen.
Für weitere 5 Minuten mit den Champignons köcheln lassen, dabei gelegentlich umrühren.
Pak Choi untermengen und nochmals 3 Minuten köcheln.
