10 ml Sonnenblumenöl 1 Zwiebel 100 g Kartoffeln 500 ml Gemüsebrühe bio 200 g Vogelmiere
Die Kartoffeln und Zwiebel schälen und in Würfel schneiden. In einem Topf die Zwiebelwürfel und Kartoffelwürfel im Sonnenblumenöl anschwitzen. Mit der Gemüsebrühe ablöschen und so lange kochen bis die Kartoffeln weich sind. In der Zwischenzeit die Vogelmiere waschen, trocken topfen und klein schneiden. Wenn die Kartoffeln weich sind, die Vogelmieren hinzugeben ca 5 Minuten weiter köcheln lassen. Danach die Suppe mit Hilfe eines Pürierstabes fein pürieren und durch ein Sieb passieren. Die Suppe mit Salz und Pfeffer abschmecken und liebevoll in einem Teller anrichten. Ich verfeinere dieses Rezept sehr gern mit Brennesselsamen und Schwarzkümmel.
