500 g Rote Bete 200 g Möhren 1 säuerlicher Apfel (Boskop oder Granny Smith) 1 TL Zitronensaft 1 TL Honig 1 TL grober Senf 5 EL Rotwein-Essig Salz Pfeffer 1 EL Leinsamen 1 EL Sonnenblumenkerne
Rote Bete schälen, grob raspeln und auf einer Servierplatte verteilen. Dabei Küchenhandschuhe tragen, da die Knollen stark abfärben. Möhren schälen, grob raspeln und auf die rote Bete geben. Apfel vierteln, Kerngehäuse entfernen. Viertel grob raspeln, mit Zitronensaft beträufeln und in der Mitte der Platte aufhäufen. Für das Dressing zum Rote Bete-Apfel-Salat Honig, Senf, Essig, Salz und Pfeffer verrühren und über den Salat gießen. Mit Leinsamen und Sonnenblumenkernen bestreuen. Dazu schmeckt eine Scheibe Vollkornbrot oder Sauerteigbrot.
