Aus Limettensaft, Granatapfelsirup, Olivenöl, Zucker, Salz und Pfeffer eine Sauce rühren. Die Roten Beten in kleine Würfel schneiden (ca. 6 mm). Mit der Sauce mischen und 1-2 Std. kalt stellen, dabei öfter umrühren. Thymian abspülen und trockenschütteln. Einige kleine Zweige beiseite legen. Die restlichen Blättchen abstreifen und hacken. Walnusskerne trocken rösten und grob hacken. Granatapfel öffnen und die Kerne herauslösen. Rote Bete mit Thymian und Walnüssen mischen. Mit den Granatapfelkernen bestreuen und mit Thymianzweigen dekorieren.
