3 Karotten 5 Kartoffeln je ½ frische Paprika gelb/orange/rot 1 Zwiebel 3 Knoblauchzehen 500 g Sauerkraut 1 L Gemüsebrühe 1 EL Tomatenmark 1 EL süßes Paprikapulver Salt, Pfeffer Kümmel (wer mag) – für uns ein Muss!
Alles Gemüse putzen, schneiden. Die Kartoffeln koche ich bei dieser Suppe separat bißfest. Somit nehme sie nicht die Säure des Krautes an. Zwiebel, Knoblauch andünsten. Dann die Karotten und Paprika dazu und kurz andünsten. Tomatenmark und Paprikapulver unterrühren. Mit der Gemüsebrühe aufgießen. So lange kochen lassen bis die Kartoffeln bißfest sind. Diese dann abgießen und ausdämpfen lassen. Das Sauerkraut zur Suppe und ca. 5-7 Min köcheln lassen. Dann die Kartoffeln dazu und alles 5 Min nur noch ziehen lassen. Ich habe noch frischen Majoran dazu gegeben, weil noch vorhanden. Man kann auch Petersilie dazu geben.
