Da lief mir doch heute ein Rezept über den Weg, das ich gleich mit euch teilen muss 👉 weil es waaahnsinnig lecker ist, vegan, basisch und folglich hochgradig gesund. 🤓
Brennnessel-Kokossuppe mit gebackenen Möhren 🌱🥕🥥:
200g Möhren in dünne Scheiben schneiden, Olivenöl und Salz dazu & im Backofen ca 10 min backen.
Derweil 100g Kartoffeln schälen & würfeln und zusammen mit 3 Knoblauchzehen und 1 Zwiebel in etwas Olivenöl anbraten, dann mit 500ml Gemüsebrühe ablöschen & weichkochen. Zwei gute Hände Brennnesselspitzen dazu & kurz mitkochen, 400ml Kokosmilch, Salz & Pfeffer dazu & abschließend pürieren.

🥕 Die Suppe mit den Karottenstücken & beliebigen weiteren "Features" (bei mir 1 EL Bärlauchpesto, Hefeflocken & Koriander 🤤) garnieren und es sich dann so richtig schmecken lassen! ❤️🔥
